Lunch for Amanda. Flowered cucumbers. Roasted Cauliflower. Baby Carrots. Craisins. Lettuce tacos with Chicken Thighs cooked with tomatoes, zucchini, and peppers.
Taco Tuesday
So for Taco Tuesday, I think that is what today is, we have a delicious Roasted Corn Salad, Cucumbers, Carrots and String Cheese, Mexican Chocaolate Spiced Almonds, and three Lettuce tacos with Chorizo-spiced Chicken and Avocado. I have been gone for a few days, so haven’t been able to make Amanda lunches, so trying to step up my game.
Wednesday Lunch
Today was the first day I made Amanda lunch in her new PlanetBox lunchbox. Peeled cucumbers, baby carrots, and cauliflower. I made some meatballs with 1 part ground chicken, 1 part ground pork, and 2 parts lean ground beef, with a little grated Parmesan cheese and fresh mint, parsley, and basil from our earthbox. Little bit of mint mixed with Greek yogurt and a dash of Tabasco for a sauce.
The magnets are interchangeable so you can personalize and customize the look of your lunchbox.

Dinner with Amanda last night was great, and tonight we went to Dot’s with my parent’s, brother, and Abuelita. Mac and Cheese with house-made Bacon.
Man I love their Steak Tartar.
GET THAT SHIT! And if you like Brussel Sprouts, get your ass over to Dot’s. And if you don’t like Brussel Sprouts, give it a shot anyways.
From the way back machine, from January 4, 2008. I have not talked anyone’s ear off, and it is with a heavy heart that I admit that I have NOT hypnotized anyone. I better get on that.
They gave me my grandfathers pocket watch. It is beautiful, and I am so happy to have it.
